Betsy’s No Garlic Quiche Unleashed!

Ingredients:
  • 8 oz. mushrooms, cleaned and sliced
  • 6 eggs, beaten
  • 2 leeks, cleaned and sliced**
  • 3½ c cheese (A mix of your choice. I use mozzarella and Mexican cheese blend.)
  • 1 c milk
  • 1 c heavy cream
  • 1 c olives, sliced
  • 3 Tbs flour
  • 2 Tbs butter
  • 1+ tsp onion powder**
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 pie crust (I prefer homemade) pressed into a greased pie pan, pricked with a fork. Omit if you prefer a frittata.

Directions:
  1. Sauté the sliced leeks and mushrooms in butter until softened and slightly golden. Once cooked, remove from heat and allow to cool slightly before adding to the egg mixture in the next step.
  2. In a large bowl, combine the eggs, almond milk, cream, cheese, sautéed leeks and mushrooms, olives, flour, onion powder, salt, and pepper. Stir until completely blended.
  3. Place the pie crust (in a pie pan) on a baking sheet for easier handling and to prevent spills. Pour the mix into a prepared pie crust. Crimp 2 inch strips of aluminum foil around the crust’s edge to prevent it from being overcooked.
  4. Bake at 375 F for 40 minutes then remove the foil. Continue cooking for 5 minutes or until kissed with gold on top. Test for doneness by sticking a knife or toothpick into the center. If it comes out clean, the quiche is done.

  • broccoli
  • cauliflower
  • diced new potatoes (cooked)
  • green chilies, seeded and diced
  • jalapeño peppers, seeded, sliced or diced
  • kale
  • kidney beans, drained and rinsed
  • onion, diced**
  • scallions, sliced**
  • spinach
  • summer squash, sliced or grated
  • Swiss chard
  • tomatoes (fresh sliced, diced, or sun-dried*)

Herb variation suggestions:

  • cayenne
  • chili powder*
  • chipotle
  • cumin
  • Herbes de Provence
  • thyme

Cooked meat or dairy variation suggestions:
  • chicken (strips or diced)
  • crumbled bacon (turkey or pork)
  • Parmigiano-Reggiano
  • prosciutto

*May contain garlic. Choose your brand carefully.
**Omit if sensitive to alliums.
