Betsy’s No Garlic Open-Faced Tomato Sandwich

Ingredients:
  • 1 French bread, sliced ½ to 1 inch thick and grilled or toasted
  • 1 c Betsy’s “OMG!” No Garlic Basil Pesto
  • 1 large tomato, sliced
  • brie, sliced (feta, mozzarella, or shaved Parmigiano-Reggiano are also good)
  • fresh cracked pepper to taste
  • fresh basil leaves (for garnish)

Directions:
  1. Place the toasted bread slices on a baking sheet. 
  2. Dollop and spread the pesto onto the bread.
  3. Place a tomato slice over the pesto.
  4. Place some cheese over the tomato.
  5. Add a few turns of fresh cracked pepper over the top of the cheese.
  6. Bake at 350 F until the cheese is melted (about 5-10 minutes).
  7. Garnish with fresh basil and enjoy this simple pleasure!
