Betsy’s No Garlic Tikka Masala

Ingredients:
  • 2 c tomato purée (from fresh tomatoes)
  • ⅔ c organic Half & Half (or cream)
  • ¼ c butter
  • 1 onion, diced
  • 1 Tbs ground cilantro (or coriander)
  • 1 Tbs ground ginger
  • 4 tsp organic coconut sugar (or organic raw sugar)
  • 2 tsp sweet or smoky paprika
  • 2 tsp ground cumin
  • 1¼ tsp salt
  • 1 tsp ground cardamom
  • 1 tsp ground nutmeg
  • ½ tsp pepper
  • ¼ tsp crushed red pepper flakes (optional)
  • cilantro (for garnish)

Directions:
  1. Sauté the diced onions in butter on medium heat in a large sauce pan. Stir occasionally until the onions caramelize. 
  2. While waiting for the onions, combine the dry spices in a bowl. 
  3. Once the onions are caramelized, turn the heat down to medium low, and then add the spices, tomato purée, and the Half & Half. 
  4. Simmer until slightly thickened. 
  5. Although the sauce is delicious immediately, it tastes even better the next day once the flavors have blended. 
  6. Add the Delicious Additions of your choice.
  7. Serve with naan or over rice. 

Delicious Additions:
  • Cooked chicken
  • Pan seared paneer (cottage cheese)
  • Peppers
  • Diced tomatoes
  • Peas

Creative Consideration:
Save time by making and storing your own Tikka Masala spice mix (dry seasonings) for use at a later date.
