Betsy’s No Garlic Midwesterners' Delight Smoky Meatloaf

Ingredients:
  • 2 lbs. ground beef
  • 2 eggs
  • 2 c Betsy's No Garlic Sensationally Saucy Tomato Marinara
  • 4 oz. can sliced mushrooms
  • ½ c onion, diced
  • ½ c plain oatmeal
  • 2 Tbs olive oil
  • 2 Tbs onion powder
  • 2 tsp leaf oregano
  • 1 tsp ground mustard
  • 1 tsp fennel seed
  • 1 tsp salt
  • ¼ tsp pepper
  • ¼ tsp liquid smoke

Directions:
  1. Sauté the onions and mushrooms in olive oil until the onions are translucent. 
  2. Add all ingredients, except the marinara, to a large mixing bowl. 
  3. With thoroughly clean hands, mix the ingredients together until uniformly blended.
  4. In a roasting pan (about 9 inches x 13 inches), form the meat mixture into a flattened loaf. Be sure the loaf is not more than about 2½ inches tall so it will cook evenly. 
  5. Once the loaf is formed, use your fingers to poke successional holes throughout the center of loaf. Not only does this allow the meat to cook thoroughly, it also allows the marinara to tenderize and season the meat further. 
  6. Pour the marinara over the loaf, being sure to fill each finger hole. 
  7. Bake at 350 F for 45 minutes or until done. 
  8. Allow the meat to rest for about 10 minutes before serving.
