Betsy’s No Garlic Cranberry Pear Sauce

Ingredients:
  • 12 oz. cranberries (fresh, rinsed)
  • 2 pears, diced (I used Bartlett pears) 
  • 1 c organic apple cider (or sparkling cider)
  • 1¼ c organic coconut sugar 
  • ¾ c port wine (optional)
  • ½ tsp cinnamon
  • 3/8 tsp cardamom
  • 1.75 oz. low-sugar pectin (I used Sure-Jell)
  • Chopped walnuts or pecans (optional)

Directions:
  1. Combine all ingredients in a medium sized sauce pot and simmer on medium-low to medium heat until the berries burst (about 15-20 minutes). 
  2. Chill until completely cool. 
  3. Stir in chopped nuts before serving if desired.
